Blueberry muffins
Last week, I got some local blueberries at Draghi's farm market on Route 16 between Portland and Glastonbury. So this morning I made some blueberry muffins. They're so easy and delicious!
Ingredients:
2 cups white flour (divided)
1 cup fresh blueberries
1 Tbs baking powder
1/2 tsp salt
1/2 cup sugar
1 egg, slightly beaten
1 cup milk
1/4 cup melted butter
Preheat oven to 375 deg F. Butter muffin pans or use paper liners.
Sprinkle 1/4 cup of the flour over the blueberries and mix together. Set aside. (The flour will keep the berries from sticking together when you add them to the batter.)
In a large bowl, mix remaining flour, baking powder, salt and sugar. Add egg, milk, and butter, stirring only to dampen all ingredients. Batter should not be smooth. Finally, add blueberries and fold in carefully.
Spoon batter into prepared muffin cups, filling each about two-thirds full. Bake for about 20 - 25 minutes at 375 deg. Makes 12 - 16 muffins, depending on size.
