Big Bill Lee's Sweet Baked Beans

Yield: large quantity, perfect for parties or barbecues.

I don't know who Big Bill Lee is, but this was one of the first recipes I ever made from my mom's recipe box.  I still love it today.

Ingredients:

  • 3 - 1lb. 5oz. cans of pork and beans, plus one small can drained and rinsed pork and beans (reserve these)
  • 2 slices bacon
  • 1 large onion, chopped
  • 1 cup tightly packed brown sugar
  • 3/4 cup molasses
  • 2 Tbs. honey
  • 4 tsp. dry mustard
  • 1/2 cup ketchup
  • 1/4 cup Worcestershire sauce
  • 1/8 tsp cayenne pepper
  • 1 green pepper, chopped

Method

  1. Cook all ingredients (except reserved beans) together for three hours in a slow cooker or crock pot, dipping off juice as it cooks.
  2. About 15 - 30 minutes before serving, add small can pork and beans, drained and rinsed.
