Black Bean Dip

Makes 3 cups, takes about 20 minutes with cooked beans.

This is a wonderful dip for parties and it's also great as a filling for burritos.  It's pretty low in fat and very easy to make.  Our friend Tony loves it . . . he makes it better than I do, now.

Ingredients:

  • 2 cans black beans, or 1 1/2 cups dried black beans, soaked and cooked
  • 1/4 C water
  • 1 large green bell pepper, chopped fine, 1 tablespoon reserved for garnish
  • 1 small red onion, chopped fine, 1 tablespoon reserved for garnish
  • 2 - 3 tablespoons vegetable oil
  • 1 1/2 teaspoons ground cumin, or to taste
  • Salt to taste
  • 2 tablespoons cider vinegar, or to taste
  • tortilla chips

Method

  1. Saute pepper and onion in oil over moderate heat.  When vegetables are softened, add cumin to pan and cook one minute.
  2. Add beans and water to pan and simmer mixture for 15 minutes, covered tightly. 
  3. Using a potato masher or a fork, mash softened beans until mostly smooth and then add vinegar and salt to taste.
  4. Garnish with reserved green pepper and onion, and serve with tortilla chips.
  5. This dip may be made two days in advance and kept chilled and covered.
