Fast Blueberry Cobbler

Serves 6, takes about 1 hour.

Here's one from my great aunt Mamie, who truly was a great aunt.  This recipe is so easy, you just pour everything together and the crust rises to the top.  Serve with vanilla ice cream, or just a little cream poured over it.   Heavenly . . .

Ingredients:

  • 1/2 cup (1 stick) butter
  • 1 cup sifted self-rising flour
  • 3/4 cup sugar, divided
  • 3/4 cup milk
  • 2 cups fresh blueberries (1 pint)
  • 1/2 cup water

Method

  1. Preheat oven to 350° F.  Melt butter in a shallow 1 1/2 quart baking dish in oven.
  2. Combine flour, 1/4 cup sugar, and milk in mixing bowl; stir to blend.  Pour batter evenly over melted butter.
  3. Stir together berries, remaining 1/2 cup sugar, and water; spoon evenly over batter.  Do not stir.
  4. Bake 45-50 minutes or until golden brown and bubbly.   Serve.
