Blueberry Muffins
Makes 12 muffins.My
favorite. So easy, and so good in the summertime when the berries are fresh!
Ingredients:
- 2 cups white flour (divided)
- 1 cup fresh blueberries
- 1 Tbs baking powder
- 1/2 tsp salt
- 1/2 cup sugar
- 1 egg, slightly beaten
- 1 cup milk
- 1/4 cup melted butter
Method
- Preheat oven to 375 deg F.
- Butter muffin pans or use paper liners.
- Sprinkle 1/4 cup of the flour over the blueberries and mix
together. Set aside. (The flour will keep the berries from sticking together
when you add them to the batter.)
- In a large bowl, mix remaining flour, baking powder, salt
and sugar.
- Add egg, milk, and butter, stirring only to dampen all
ingredients. Batter should not be smooth.
- Add blueberry - flour mixture and fold in carefully.
- Spoon batter into prepared muffin cups, filling each about
two-thirds full.
- Bake for about 20 - 25 minutes at 375 deg.
