Blueberry Muffins

Makes 12 muffins.

My favorite.  So easy, and so good in the summertime when the berries are fresh!

Ingredients:

  • 2 cups white flour (divided)
  • 1 cup fresh blueberries
  • 1 Tbs baking powder
  • 1/2 tsp salt
  • 1/2 cup sugar
  • 1 egg, slightly beaten
  • 1 cup milk
  • 1/4 cup melted butter

Method

  1. Preheat oven to 375 deg F.
  2. Butter muffin pans or use paper liners.
  3. Sprinkle 1/4 cup of the flour over the blueberries and mix together.   Set aside.  (The flour will keep the berries from sticking together when you add them to the batter.)
  4. In a large bowl, mix remaining flour, baking powder, salt and sugar.
  5. Add egg, milk, and butter, stirring only to dampen all ingredients.  Batter should not be smooth.
  6. Add blueberry - flour mixture and fold in carefully.
  7. Spoon batter into prepared muffin cups, filling each about two-thirds full.
  8. Bake for about 20 - 25 minutes at 375 deg.
