Butterballs
My mom's recipe for butterballs, a sort of pecan shortbread
cookie. One of my all-time favorites. These are addictive!Ingredients:
- 1 cup butter -- add 1/8 tsp salt to recipe if butter is
unsalted
- 1/2 cup 10X confectioner's (powdered) sugar
- 1/2 teaspoon vanilla
- 1 3/4 cup flour
- 1/2 cup chopped pecans
- More powdered sugar for coating cookies
Method
- Cream together butter and powdered sugar.
- Mix in other ingredients.
- Chill several hours
- Roll into 36 1-inch balls (I make mine smaller -- I get
closer to 50 - 60 cookies from this recipe).
- Bake on ungreased cookie sheets for 20 minutes at 350° F.
Be careful not to burn!
- Roll cookies in powdered sugar while still warm. Cool
on wire racks.
