Butterballs

My mom's recipe for butterballs, a sort of pecan shortbread cookie. One of my all-time favorites. These are addictive!

Ingredients:

  • 1 cup butter -- add 1/8 tsp salt to recipe if butter is unsalted
  • 1/2 cup 10X confectioner's (powdered) sugar
  • 1/2 teaspoon vanilla
  • 1 3/4 cup flour
  • 1/2 cup chopped pecans
  • More powdered sugar for coating cookies

Method

  1. Cream together butter and powdered sugar.
  2. Mix in other ingredients.
  3. Chill several hours
  4. Roll into 36 1-inch balls (I make mine smaller -- I get closer to 50 - 60 cookies from this recipe).
  5. Bake on ungreased cookie sheets for 20 minutes at 350° F.   Be careful not to burn!
  6. Roll cookies in powdered sugar while still warm.  Cool on wire racks.
