Ginger Button Cookies

These are nice little round ginger cookies. The sugar makes them look sparkly.

Ingredients:

  • 2 1/4 C all-purpose flour
  • 2 tsp baking soda
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp salt
  • 1 C packed brown sugar
  • 3/4 C shortening or cooking oil
  • 1/4 C molasses
  • 1 egg
  • 1/2 tsp vanilla
  • granulated sugar to roll cookies in

Method

  1. Stir together flour, baking soda, spices, and salt.
  2. Combine the sugar, shortening/oil, molasses, egg, and vanilla, and beat well by hand or with a mixer. When thoroughly mixed, add dry ingredients and beat well.
  3. Chill dough 1 to 2 hours.
  4. Form into 1-inch balls, roll in granulated sugar, and place 2 inches apart on an ungreased cookie sheet.
  5. Bake at 375° F for about 10 minutes.
