| Ginger Button Cookies Makes 48
These are nice little round ginger cookies. The sugar makes
them look sparkly.
Ingredients:
- 2 1/4 C all-purpose flour
- 2 tsp baking soda
- 1 tsp ground ginger
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp salt
- 1 C packed brown sugar
- 3/4 C shortening or cooking oil
- 1/4 C molasses
- 1 egg
- 1/2 tsp vanilla
- granulated sugar to roll cookies in
Method
- Stir together flour, baking soda, spices, and salt.
- Combine the sugar, shortening/oil, molasses, egg, and vanilla, and
beat well by hand or with a mixer. When thoroughly mixed, add dry ingredients and beat
well.
- Chill dough 1 to 2 hours.
- Form into 1-inch balls, roll in granulated sugar, and place 2 inches
apart on an ungreased cookie sheet.
- Bake at 375° F for about 10 minutes.
