Apparently, Chesterton never encountered the poetry of James McIntyre (1827-1906), a Canadian poet who was known as "the Cheese poet." Or perhaps Chesterton's definition of "poetry" was too narrow to include McIntyre's many Odes to Cheese.

Nevertheless, cheese is a topic that can inspire even the most retiring souls to vocal expressions of ardent love.  In honor of this most perfect food, I'd like to share with you my favorite recipe for macaroni and cheese.

A few other thoughts on cheese:

  • "I could imagine a 16th or 17th century poet comparing his lover's body to various cheeses.... but then, I'm sick."
  • "This cheese is really good. I shouldn't eat the whole thing in one sitting, should I?"
