| Shannon's Chocolate Souffles Serves 6.
These little chocolate souffles are elegant and delicious.
Read the whole recipe before starting, and pay close attention to how and when the
sugar is used -- I've made a mistake on this before.
Ingredients:
- 6 ounces dark sweet chocolate, cut into pieces
- 1/2 cup plus 1 tsp. sugar, plus extra for sprinkling
- 1/3 cup milk
- 4 egg yolks
- 6 egg whites
- 1/4 cup sugar
- powdered sugar
Method
- Preheat oven to 350 degrees F. Butter six 1/2 cup souffle
dishes and sprinkle with sugar (this is the extra sugar for sprinkling listed above).
Shake out excess sugar. (Or use one larger souffle dish.)
- Combine chocolate, 1/2 cup plus 1 tsp. sugar, and milk in pan.
Set over low heat and cook, stirring frequently, til chocolate is melted. Transfer
to mixing bowl and let cool slightly. Beat in egg yolks and set aside.
- Beat egg whites in a medium sized bowl until firm. Add
remaining 1/4 cup sugar and continue beating until egg whites are stiff and glossy.
- Stir half of whites into chocolate mixture, then carefully fold in
remaining whites, blending thoroughly.
- Gently spoon mixture into prepared dishes. Bake at 350 degrees
F for 20 minutes. Sprinkle tops with powdered sugar and serve.
