Cheese Rounds

These spicy little cheese cookies are popular in the South.   There are lots of different recipes for them, but the rice krispies in this one add extra crunch.  I make them every Christmas, just like my aunt Mamie did. 

Not a low-fat food.  :-)

Ingredients:

  • 2 cups flour
  • 2 cups rice krispies
  • 2 sticks butter or margarine
  • 10 ounces extra sharp cheddar cheese, grated
  • pinch salt
  • cayenne red pepper to taste
  • pecan halves (optional)

Method

  1. Heat oven to 275 deg F.
  2. Mix together (by hand) grated cheese and softened butter or margarine.
  3. Add flour, salt, and red pepper.  Mix.
  4. Add rice krispies; mix.
  5. Pinch off dough and roll into 1-inch balls; flatten with a fork on ungreased baking sheets.  Top with pecan halves if desired.
  6. Bake at 275 deg for 30 minutes.  Do not burn.   Remove from baking sheets to wire racks or brown paper and cool.
  7. Store tightly covered.
