| Chocolate Crinkle Cookies Makes 48
I got this cookie recipe from a fellow Penn State grad
student at a Christmas cookie swap party in 1993.
Ingredients:
- 3 eggs, beaten
- 1 1/2 C sugar
- 1/2 C oil
- 2 tsp vanilla
- 4 oz. unsweetened chocolate, melted and cooled
- 2 C all-purpose flour
- 2 tsp baking powder
- 1/4 C sifted confectioner's sugar
Method
- Beat together eggs, sugar, oil, and vanilla; add chocolate.
- Stir in flour and baking powder. Mix well.
- Cover and chill for 1 to 2 hours.
- Roll chilled dough between hands into about 48 1-inch balls.
Roll in confectioner's sugar and place 2 inches apart on ungreased baking sheets.
- Bake at 375° F for 10 minutes.
- Cool on racks.
