| Shannon's Fancy Potato Salad Serves 12 or so. Good for parties.
My friend Shannon seems to be getting quite a following on
these pages. It's not surprising, since she's a very good cook. This is a
great party salad recipe Shannon got from her friend Regena. It takes some extra
time and effort, but it's really worth it.
Ingredients:
- 2 envelopes plain gelatin
- 1 cup buttermilk
- 8 cups cooked, peeled, chopped potatoes
- 6 hard cooked eggs, diced
- 2 cups chopped celery
- 1/2 cup chopped green onion
- 2 cups mayonnaise
- 1 cup sour cream
- 1 Tbs prepared mustard
- 2 Tbs sugar
- 1 Tbs salt
Method
- Oil a 12-cup tube pan.
- Dissolve gelatin in heated buttermilk. Cool.
- In large bowl, combine all ingredients and gelatin mixture.
- Heap salad into greased tube pan and press firmly into place.
- Cover and refrigerate until set.
- To unmold, use a thin, narrow knife and loosen center core. Dip
pan in hot water for about 5 minutes. Turn out on serving plate.
- Garnish with celery, cucumber, hard cooked eggs, etc.
