Shannon's Fancy Potato Salad

Serves 12 or so.  Good for parties.

My friend Shannon seems to be getting quite a following on these pages.  It's not surprising, since she's a very good cook.  This is a great party salad recipe Shannon got from her friend Regena.  It takes some extra time and effort, but it's really worth it.

Ingredients:

  • 2 envelopes plain gelatin
  • 1 cup buttermilk
  • 8 cups cooked, peeled, chopped potatoes
  • 6 hard cooked eggs, diced
  • 2 cups chopped celery
  • 1/2 cup chopped green onion
  • 2 cups mayonnaise
  • 1 cup sour cream
  • 1 Tbs prepared mustard
  • 2 Tbs sugar
  • 1 Tbs salt

Method

  1. Oil a 12-cup tube pan.
  2. Dissolve gelatin in heated buttermilk.  Cool.
  3. In large bowl, combine all ingredients and gelatin mixture.
  4. Heap salad into greased tube pan and press firmly into place.
  5. Cover and refrigerate until set.
  6. To unmold, use a thin, narrow knife and loosen center core.  Dip pan in hot water for about 5 minutes.  Turn out on serving plate.
  7. Garnish with celery, cucumber, hard cooked eggs, etc.
