Hot Fudge Pudding Cake

Serves about six.

I love this dessert because it's very easy but always a big hit.  It only takes a minute or so to mix up, and if I put it in the oven just as we're sitting down for dinner it's usually finished just when we're ready for dessert.

While this dessert bakes, the crust rises to the top of the hot chocolaty pudding.  I love to serve this with vanilla ice cream; it's almost like a hot fudge brownie sundae.  For a similar dessert, see Lemon Sponge Pudding Cake.

Ingredients:

  • 1 cup flour
  • 3/4 cup sugar
  • 6 Tbs cocoa, divided
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup milk
  • 2 Tbs vegetable oil
  • 1 tsp vanilla
  • 1 cup packed brown sugar
  • 1 3/4 cup hot water

Method

  1. In a medium bowl, combine flour, sugar, two tablespoons cocoa, baking powder and salt.  Stir in milk, oil, and vanilla just until smooth.   Spread mixture in an ungreased 9-inch square baking pan.
  2. Combine brown sugar and remaining four tablespoons cocoa; sprinkle over batter in pan.  Pour hot water over all; do not stir.
  3. Bake at 350° F for 35-40 minutes.  Serve warm, with ice cream or whipped cream if desired.
