Imperial Chicken
Serves 6.
This is an old favorite. The recipe originally came from
Southern Living magazine, although I've modified it a little over the years.
Ingredients:
- 1 cup dry breadcrumbs
- 1/4 cup grated parmesan cheese
- 1 tsp dried basil
- 1 tsp dried oregano
- 1 tsp dried parsley
- 1/2 tsp salt
- 1/8 tsp pepper
- 6 boneless, skinless chicken breasts
- 1/2 cup buttermilk or milk
- 2 Tbs butter or margarine, melted
- 3 cloves garlic, crushed and minced
- juice of 1 lemon
- paprika
Method
- Combine first seven ingredients (breadcrumbs, cheese, and spices).
- Dip each chicken breast in buttermilk or milk, and dredge in
breadcrumb mixture.
- Arrange chicken breasts in a lightly greased baking dish.
- Combine melted butter, minced garlic, and lemon juice; drizzle over
chicken breasts. Sprinkle with paprika.
- Bake at 350 deg. F for 40 minutes, or until tender.
