Imperial Chicken

Serves 6.

Imperial ChickenThis is an old favorite. The recipe originally came from Southern Living magazine, although I've modified it a little over the years.

Ingredients:

  • 1 cup dry breadcrumbs
  • 1/4 cup grated parmesan cheese
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 tsp dried parsley
  • 1/2 tsp salt
  • 1/8 tsp pepper
  • 6 boneless, skinless chicken breasts
  • 1/2 cup buttermilk or milk
  • 2 Tbs butter or margarine, melted
  • 3 cloves garlic, crushed and minced
  • juice of 1 lemon
  • paprika

Method

  1. Combine first seven ingredients (breadcrumbs, cheese, and spices).
  2. Dip each chicken breast in buttermilk or milk, and dredge in breadcrumb mixture.
  3. Arrange chicken breasts in a lightly greased baking dish.
  4. Combine melted butter, minced garlic, and lemon juice; drizzle over chicken breasts. Sprinkle with paprika.
  5. Bake at 350 deg. F for 40 minutes, or until tender.
