Laura's Macaroni and Cheese Deluxe

6-8 servings.  Takes about an hour.

For my 30th birthday, my husband planned a pot-luck party.  My friend Laura showed up with a pan of macaroni and cheese, because she knew I loved it.   When I tasted it, I liked it better than my own recipe.  It has a lighter, creamier feel.  And it's easier to make, too.

I'm willing to admit it when I'm beaten!  So here's the recipe for Laura's Macaroni and Cheese Deluxe.

Ingredients:

  • 1 (7 oz.) package elbow macaroni (about 2 c. uncooked)
  • 2 cups small curd cream-style cottage cheese
  • 1 cup dairy sour cream
  • 1 slightly beaten egg
  • 3/4 teasp. salt
  • a dash of pepper
  • 8 oz. (2 cups) sharp process cheddar cheese shredded
  • paprika

Method

  1. Cook macaroni according to package directions; drain well.
  2. Combine cottage cheese, sour cream, egg, salt and pepper.  Add shredded cheese, mixing well; stir in cooked macaroni.
  3. Turn into a greased 9 x 9 x 2 inch baking dish. Sprinkle with paprika.
  4. Bake in 350 degree F oven for 45 minutes.
