| Pervin's Lemon Carrots Serves 4.
Pervin, my college roommate, used to make these carrots
when we would cook in the dorm. They're for people who like their carrots sweet.
I leave out the sugar sometimes, since I like mine a little less sweet.
Ingredients:
- 8 carrots, scraped and sliced
- 3/4 cup water
- 1/4 cup sugar
- 1 1/2 Tbs. lemon juice
- 1/8 tsp. salt
- 2 Tbs. butter
Method
- Combine all ingredients except butter in saucepan. Cover and
cook over medium heat for 15 minutes or until carros are tender. Be careful not to
burn.
- Add butter and stir until melted. Garnish with parsley and
serve immediately.
