Pervin's Lemon Carrots

Serves 4.

Pervin, my college roommate, used to make these carrots when we would cook in the dorm.  They're for people who like their carrots sweet.   I leave out the sugar sometimes, since I like mine a little less sweet.

Ingredients:

  • 8 carrots, scraped and sliced
  • 3/4 cup water
  • 1/4 cup sugar
  • 1 1/2 Tbs. lemon juice
  • 1/8 tsp. salt
  • 2 Tbs. butter

Method

  1. Combine all ingredients except butter in saucepan.  Cover and cook over medium heat for 15 minutes or until carros are tender.  Be careful not to burn.
  2. Add butter and stir until melted.  Garnish with parsley and serve immediately.
