Amanda's Mandarin and Almond Salad

Amanda and Frank brought this salad to dinner our house and it was a big hit. It's both unusual and delicious. The sweet-and-sour dressing blends well with the mandarin oranges, and the sugared almonds add a great crunch. Amanda got the recipe from Frank's mom.

Mandarin and Almond SaladIngredients:

  • 1/4 cup sliced almonds
  • 1 Tbs + 1 tsp sugar
  • 1/4 head iceberg lettuce
  • 1/4 head romaine lettuce
  • 2 medium stalks celery, sliced thin
  • 2 green onions with tops, sliced thin
  • 1 can (11 oz) mandarin orange segments
  • 1/4 cup vegetable oil
  • 2 Tbs sugar
  • 2 Tbs vinegar
  • 1 Tbs snipped parsley
  • 1/2 tsp salt
  • dash pepper
  • dash red pepper sauce

Method

  1. Cook almonds and sugar over low heat, stirring constantly until sugar is melted and almonds are coated. Cool on wax paper and separate.
  2. Combine lettuce, celery, and green onions in large bowl. Toss in mandarin oranges and top with almonds.
  3. For dressing, mix remaining ingredients and shake in covered jar. Refrigerate.
  4. When ready to serve, pour dressing over salad and toss with greens.
