Amanda's Mandarin and Almond Salad
Amanda and Frank brought this salad to dinner our house and
it was a big hit. It's both unusual and delicious. The sweet-and-sour dressing blends well
with the mandarin oranges, and the sugared almonds add a great crunch. Amanda got the
recipe from Frank's mom.
Ingredients:
- 1/4 cup sliced almonds
- 1 Tbs + 1 tsp sugar
- 1/4 head iceberg lettuce
- 1/4 head romaine lettuce
- 2 medium stalks celery, sliced thin
- 2 green onions with tops, sliced thin
- 1 can (11 oz) mandarin orange segments
- 1/4 cup vegetable oil
- 2 Tbs sugar
- 2 Tbs vinegar
- 1 Tbs snipped parsley
- 1/2 tsp salt
- dash pepper
- dash red pepper sauce
Method
- Cook almonds and sugar over low heat, stirring constantly until sugar
is melted and almonds are coated. Cool on wax paper and separate.
- Combine lettuce, celery, and green onions in large bowl. Toss in
mandarin oranges and top with almonds.
- For dressing, mix remaining ingredients and shake in covered jar.
Refrigerate.
- When ready to serve, pour dressing over salad and toss with greens.
