| Mashed Potatoes Okay, so it's simple . . . but we all have to start somewhere.
Anybody can make good mashed potatoes.
Ingredients:
- White potatoes, 2 lb. - 5 lb. depending on amount of mashed potatoes
wanted (use 2 - 3 good sized potatoes per person)
- salt
- buttermilk, sour cream or milk
- butter/margerine
Method
- Peel potatoes and cut into quarters or smaller pieces (they cook
faster this way). Place in large saucepan.
- Cover with water, add a little salt, and bring to a boil.
Simmer about 20 minutes, or until a fork goes straight through a large piece of potato.
- Drain water; leave potatoes in pot.
- Add 1 to 2 tablespoons butter and about 1/4 cup buttermilk (or sour
cream or milk). Mash potatoes using a masher or a fork until all are broken up, then
add more liquid if consistency is dry.
- Keep mashing until smooth, then take a wire whisk and beat potatoes
by hand until light and fluffy. (Some people use a mixer for this part. I hate
having to wash the mixer, so I do it by hand. Never, ever use a food
processor unless you want potato paste.)
