Mashed Potatoes

Okay, so it's simple . . . but we all have to start somewhere.   Anybody can make good mashed potatoes.

Ingredients:

  • White potatoes, 2 lb. - 5 lb. depending on amount of mashed potatoes wanted (use 2 - 3 good sized potatoes per person)
  • salt
  • buttermilk, sour cream or milk
  • butter/margerine

Method

  1. Peel potatoes and cut into quarters or smaller pieces (they cook faster this way).  Place in large saucepan.
  2. Cover with water, add a little salt, and bring to a boil.   Simmer about 20 minutes, or until a fork goes straight through a large piece of potato.
  3. Drain water; leave potatoes in pot.
  4. Add 1 to 2 tablespoons butter and about 1/4 cup buttermilk (or sour cream or milk).  Mash potatoes using a masher or a fork until all are broken up, then add more liquid if consistency is dry.
  5. Keep mashing until smooth, then take a wire whisk and beat potatoes by hand until light and fluffy.  (Some people use a mixer for this part.  I hate having to wash the mixer, so I do it by hand.  Never, ever use a food processor unless you want potato paste.)
