Georgia Pecan Pie

This is a simple and delicious pecan pie recipe.   Another blue ribbon winner for me, from 1993.  It's adapted from the pecan pie recipe of the New Perry Hotel in Perry, Georgia.  A wonderful place for lunch.

Ingredients:

  • 3 large eggs
  • 1 cup light corn syrup
  • 3/4 cup sugar
  • 1 tablespoon orange juice
  • vanilla, to taste
  • 2 tablespoons butter, melted
  • 1 1/2 cup pecans, coarsely chopped
  • 1 unbaked pie shell

Method

  1. Using a fork or a whisk, beat eggs slightly.  Add corn syrup, sugar, juice, and vanilla.  Stir in butter.
  2. Spread pecans over unbaked pie crust and pour filling over.
  3. Bake 45 - 55 minutes at 350° F.  Pie should be golden brown and only the center should jiggle when it's done.  Cool on rack (it will set more after it's out of the oven).
