| Creamy Potato Puff Serves 6 - 8.
Another recipe from one of my neighbors in Pennsylvania.
This dressed-up version of mashed potatoes is a nice dish for pot luck dinners.
Ingredients:
- 1 8-ounce pkg. Philadelphia cream cheese
- 4 cups hot mashed potatoes
- 1 egg, beaten
- 1/3 cup finely chopped onion
- 1/4 cup chopped pimiento
- 1 tsp. salt
- dash of pepper
Method
- Beat all ingredients together by hand or with an electric mixer (do
not use blender or food processor).
- Place in buttered 1-quart casserole and bake for 45 minutes at 350
degrees F.
