Potato Rolls
(bread machine recipe)

Makes 24 rolls.

This is a good recipe for using up that last half-cup of mashed potatoes that you just hate to throw away. Use the dough setting on the bread machine and then bake them in your oven.

Ingredients:

  • 3/4 cup water
  • 1 egg
  • 3 cups all-purpose flour
  • 1/2 cup plain mashed potatoes
  • 1 tsp salt
  • 1/4 cup shortening
  • 1/4 cup sugar
  • 1 1/2 tsp yeast

Method

  1. Place all ingredients in bread pan according to bread machine's directions.
  2. Mix on dough setting.
  3. When dough cycle has finished, place dough on counter and shape into 24 balls.
  4. Place rolls in 9x13 inch pan and allow to rise until doubled (30 - 45 minutes)
  5. Preheat oven to 400 degrees F. Bake rolls 12 minutes until golden. Serve warm.
