Grilled Rosemary Chicken Breasts

My favorite marinade for grilled chicken.  Fresh rosemary can be expensive, so if you make this a lot it's worth it to keep a pot of it growing on the windowsill.

Ingredients:

  • 4 skinless, boneless chicken breast halves
  • 5 cloves garlic, minced
  • 2 tablespoons minced fresh rosemary
  • 1 tablespoon dijon mustard
  • 1 tablespoon fresh lemon juice
  • 3/4 teaspoon salt
  • 1/4 teaspoon freshly ground pepper
  • 2 tablespoons olive oil

Method

  1. Prepare a hot fire.  Rinse chicken with cold water and pat dry; place in glass baking dish.  Mix together all other ingredients and pour over chicken, turning to coat well.  Cover and marinate at room temperature for 30 minutes.
  2. Remove chicken breasts from marinade and place on an oiled grill set 4 to 6 inches from coals.  Grill chicken, turning once and basting with reserved marinade, until it is white throughout but still juicy, about 10 minutes total.
