Grilled Rosemary Chicken Breasts
My favorite marinade for grilled chicken. Fresh rosemary can
be expensive, so if you make this a lot it's worth it to keep a pot of it growing on the
windowsill.Ingredients:
- 4 skinless, boneless chicken breast halves
- 5 cloves garlic, minced
- 2 tablespoons minced fresh rosemary
- 1 tablespoon dijon mustard
- 1 tablespoon fresh lemon juice
- 3/4 teaspoon salt
- 1/4 teaspoon freshly ground pepper
- 2 tablespoons olive oil
Method
- Prepare a hot fire. Rinse chicken with cold water and
pat dry; place in glass baking dish. Mix together all other ingredients and pour
over chicken, turning to coat well. Cover and marinate at room temperature for 30
minutes.
- Remove chicken breasts from marinade and place on an oiled
grill set 4 to 6 inches from coals. Grill chicken, turning once and basting with
reserved marinade, until it is white throughout but still juicy, about 10 minutes total.
