Lemon Chicken Schnitzel

Serves 4

A recipe from Shannon.  This one's low in fat and very tasty.  She often makes this as an accompaniment to the vodka sauce.  Add a salad and it's a great menu for any time of year.

Ingredients:

  • 1 pound boneless, skinless chicken breasts
  • Juice of one lemon
  • 1/4 cup all purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon thyme
  • 1/2 teaspoon celery salt
  • 1 egg
  • 1 teaspoon water
  • 1/2 cup fine dry breadcrumbs

Method

  1. Cut chicken horizontally into 1/4 inch thick slices (this is a little easier if the chicken is partly frozen).  Flatten between sheets of wax paper with a rolling pin.  Sprinkle chicken with lemon juice; let stand 10 minutes.
  2. In shallow dish, combine flour, salt, thyme and celery salt; mix well.  In another dish beat egg with water.
  3. Dip chicken pieces into flour mixture, then into egg mixture, then into bread crumbs.
  4. Place on lightly greased baking sheet.  Bake at 400° F for 10-15 minutes.
