Roast Turkey

This is the easiest turkey recipe I've ever used.  Because you cook the bird chest down, the white meat doesn't get all dried out.  And the apples make for wonderful gravy.

Ingredients:

  • 12 - 13 lb. turkey, thawed or fresh
  • onions and apples, quartered (three or four of each)
  • salt, pepper, paprika
  • 2 cups apple juice or cider
  • 1/2 cup soy sauce

Method

  1. Wash and dry turkey.  Sprinkle inside and out with salt, pepper, and paprika.
  2. Place chest down in roasting pan.  Fill cavities with apples and onions.
  3. Mix apple juice and soy sauce and pour into bottom of pan.
  4. Place in 325 deg. F oven.  Baste after 20 minutes and every 20-30 minutes therafter.
  5. Bird is done when mean thermometer in thigh registers 180 deg. F. (Usually takes about 3 hours for 12.5 lb turkey.)
  6. Remove from oven and tent with foil for thirty minutes before carving.
  7. Serve with turkey gravy, cornbread dressing, and cranberry sauce.
