Vodka - Tomato Sauce
Serves 2, takes about 15 minutesYep, we got the duelling Vodka Sauces here. My friend Shannon, an excellent
cook, also loves Vodka sauce. Here's her favorite recipe for it. This one is faster and a
little showier to make - it's fun for a date.
Ingredients:
- 2 tablespoons olive oil
- 1 cup finely-chopped shallots
- 1/4 teaspoon dried crushed red pepper
- 1/2 cup Vodka
- 3/4 cup whipping cream
- 3/4 cup tomato sauce
- 2/3 cup Asiago cheese
- 2 tablespoons chopped fresh parsley
- 2 tablespoons chopped fresh basil
- 1/2 pound pasta
Method
- Heat oil in skillet over medium heat. Saute shallots and
crushed red pepper until shallots are transluscent (5 minutes).
- Add Vodka and ignite. Simmer until flames subside, shaking
pan occasionally (2 minutes).
- Increase heat to high, add cream, and boil until thickened
(3 minutes).
- Add tomato sauce and boil until thickened (2 minutes).
- Cook pasta al dente. Drain, reserving 1/4 cup cooking
liquid.
- Add pasta, cheese, parsley and basil to skillet and toss to
coat. Add reserve pasta cooking liquid if mixture is dry. Season with pepper. Serve.
